Pressed into stainless steel to finish off wild ferment and then transferred into old oak barrels another 5 days later to settle age and complete malolactic fermentation. Bottled by gravity 6 months later with a tiny amount of sulfur added before bottling. Herbaceous, well rounded with lots of grip,
