Cloudy worts and a short fermentation time give their whiskies a nutty base, but it is the distillation that adds real weight to the distillate. A controlled level of solids coming across in the wash adds a rich, deep, malt loaf character to the scotch. It is this character that allows it to show so well in ex Sherry, which is exactly what the master
